Today's recipe is a Lazio workhorse, Amatriciana , presented by chef Elia Grillotti of La Corte Group in Rieti .

RESTAURANT, SCHOOL, HISTORICAL LOCATION

In the historic center of Rieti , a small town on the slopes of Mount Terminillo, the geographical center of Italy, the Ristorante La Corte is an intimate and familiar place where you can rediscover the flavors of Italian cuisine, artistic and avant-garde, entirely expressed and constantly in the name of good taste and food and wine, as also demonstrated by the attention to the wine and spirits list, of high quality and refinement.

This magnificent structure is a historic residence of the FAI: an enchanting location for ceremonies and events of all kinds and has some rooms for its guests and for anyone who intends to stay immersed in nature and history.

THE CHEF

Elia Grillotti , owner and chef of the La Corte restaurant in Rieti. He is the director of the “Chef School La Corte”, a professional training institution accredited by the Lazio Region. In 2018 he took over and restored the historic Benedictine Abbey of SS. Quirico and Giulitta, now home to the “Chef International Cooking Campus”. In 2019 he was the chef and co-creator of the project “Chaine Toscana Francigena Leonardo Inedito in Artimino”.

He is president of the Provincial Chefs Association of Rieti of the Italian Chefs Federation, Ambassador of Taste for ANDI (Italian Association DOC ITALY); Italian representative for “The Extraordinary Italian Taste” in Tunis, Calcutta, Marseille, Yerevan promoted by MAECI and created by Assocamerestero.

THE RECIPE

The historic Amatriciana is proposed by chef Elia Grillotti in its original version linked to the territory, which evokes origins, family, home, tradition and history . Made with excellent Lazio products , they enclose history in the dish with an explosion of flavors that reminds us who we are and where we come from, as chef Grillotti emphasizes.
