We are at the fourth recipe of " 7 Chefs for 7 Recipes, Mannetti in the Green Heart of Lazio ", the food and wine adventure aimed at discovering the flavors and tastes of our territory to celebrate the culinary excellence of this fantastic Italian region.

Today's preparation was created by chef Cristiano Sabatini, aka Bike Chef , who chose our most particular pasta shape: the special triangular penne.

Its recipe is a combination of typical local flavours, such as coppa di testa and Monti Cimini hazelnuts, which combined with wild fennel, olives and orange surprise us with a very tasty mix!

Cristiano Sabatini alias Bike Chef is the adventurous chef passionate about cooking and traveling on two wheels . He loves to call himself a “pot tamer” and has managed to secure a place on Alessandro Borghese ’s television program Cuochi d'Italia ”, representing his region: Lazio. He has conquered the palates of several movie celebrities, such as Carlo Verdone, Gigi Proietti, Paolo Sorrentino, Giovanni Veronesi and… Robert De Niro !

Cooking, a passion for cycling and the discovery of new places become ingredients of his dishes, together with the territory and traditions to create exciting taste adventures.

An example? His Borealis Carbonara di balena, made at a temperature of -10 degrees under the Northern Lights in Iceland, with Mannetti mezze maniche, has truly conquered everyone!
