Today we are here to offer you the sixth recipe of the format " 7 Chefs for 7 Recipes, Mannetti in the Green Heart of Lazio ", the culinary adventure aimed at discovering the flavors and tastes of our territory, which celebrates in every appointment the gastronomic excellence of this fantastic Italian region.
Today's preparation was created by chef Roberto Campitelli , of the L'Osteria di Monteverde restaurant in Rome, who chose to use Mannetti spaghetti as the format.
Their rough and porous texture is designed to retain the seasoning optimally, thus ensuring an extraordinary taste with every bite.
Fresh, seasonal ingredients are the basis of this new preparation.
THE CHEF
Roberto Campitelli is a chef who has been passionate about cooking since he was a child and whose precious technical skills have been refined and improved over time thanks to his career path focused on the search for technique, taste and goodness .
Several experiences in important restaurants led him to the discovery and exploration of gourmet and multi-ethnic cuisine thanks to the brigades with which he collaborated.
Today, his idea of catering is based on the search for fresh and genuine raw materials that are then expertly treated in all the complexities of the typical processes of traditional cuisine. In his restaurant, colors, flavors and creativity are the main ingredients of the dishes that, combined with passion, find free rein in the kitchen.
THE RESTAURANT
In 2010, together with Fabio Tenderini, he opened L'Osteria di Monteverde where he could finally experiment with all the ideas developed over the years in the various kitchens where he worked. He prefers an informal context that gives space to a direct relationship with the guest who can find new dishes dictated by the market every day and a constantly changing wine list.
This is precisely its strong point: the daily shopping, the direct relationship with the producers, the constant work and passion of the owners that make L'Osteria di Monteverde a restaurant in step with the times and with an excellent quality/price ratio as confirmed by some of the major national food and wine guides and beyond.
THE RECIPE
The recipe created by chef Roberto Campitelli delights us with a combination of authentic flavours and seasonality, characterised by a surprising taste and visual vivacity.
