Research and return to origins
Inevitable on every table, pasta is the emblem of the Italian gastronomic tradition. Ancient roots and authentic flavours inherited from generations. Our pasta preserves the culinary memory of the past, rough and porous.
Spaghetti alla Carbonara
“Spaghetti alla Carbonara”, with its genuine yet enveloping taste, is a dish of popular origin, the pride of Italian cuisine around the world. Our rough and porous Spaghetti are a perfect match for the creamy, bold sauce. A recipe whose origins date back to the Post World War II period: ingredients that are easy to find but give emotions.
Bucatini all’Amatriciana
A classic of Latium cuisine, originally from Amatrice, traced back to 1800: pasta all'”Amatriciana” is an unmistakable dish. In keeping with tradition, our Bucatini picks up the sauce for an explosion of flavour in every bite. Their porosity and texture are characteristic. They are ideal for combining with tomato, pecorino cheese and guanciale, a leaner noble fat than pancetta.
Mezze Maniche alla Gricia
Tradition has it that the recipe for “Gricia” was invented by the shepherds of Grisciano, a few kilometers from Amatrice. Dry pasta, guanciale, black pepper and pecorino cheese. An ancient dish of Roman tradition with a strong taste. The al dente cooking of our Mezze Maniche enhances the consistency of the ingredients: a perfect balance between pasta and sauce.
Memory and taste of other times
